Hello Together We Money readers! I know it’s been awhile because another project has been taking up my time, but I’m back! I was eating dinner tonight and thought I would share another quick, easy meal with you…my sushi bowl! People who know me know that I loveeeeee and I mean lurrvvvv sushi. I’d eat it every day if I could afford it. However it’s expensive so sometimes I just have to take matters into my own hands.
- 1/4 cup white rice
- 1/2 avocado
- Spoonful of cream cheese
- 1/4 cucumber chopped
- 1/2 sheet of dried seaweed
- Small handful of shredded carrots
- Small handful of fresh spinach
- 0.20 lb. of raw salmon (or fish of your choice). You can find this at a local Asian supermarket.
- Tuxedo sesame seeds
- Soy sauce (amount to your taste)
1). Cook the white rice per the instructions. I love rice cookers so I highly suggest utilizing one. It will make your life easier.
While that’s happening, in a bowl add a scoop of cream cheese.
2). On the side chop up the cucumber, salmon, and avocado into bite size pieces.
3). Shred the seaweed paper and spinach into small pieces.
4). Once the white rice is done, mix it while it’s hot with the cream cheese. This will evenly spread the flavor. Then add all remaining ingredients (spinach, fish, carrots, avocado, cucumber, seaweed) to the bowl.
5). Sprinkle on tuxedo sesame seeds and soy sauce for the complete Asian-inspired look. Enjoy and devour!
